My friend Francisco, a Chicago native, swears that deep dish pizza in the windy city is strictly a tourist scene. The real Chicago peeps are into the thin crust action. I prefer to stick to my illusions.
The best part of ordering a deep dish pizza is the wait. If the pizza does not take at least 50 minutes to arrive at the table, you have been robbed of the true experience. You must be absolutely furious with the time it takes the pizza to get to the table. And when it arrives... pure bliss.
New deep dish action arrived in Portland this week at The Star (1309 NW Hoyt St, The Pearl). The restaurant hails from San Francisco... so I'm not sure how robust the Chicago deep dish cred it will bring the the table. I will bring my stop watch and let you know.
